Earl Grey Chocolate Mousse
What you need:
20g Brave New Earl N°711
250g Cream
190g Dark chocolate
400g Cream, chilled


Bring the room temp cream to a boil, add the tea, turn down the heat and let it steep for 30 minutes, keeping a lid on. Strain the mixture afterwards. Bring 225ml of this infused cream to a boil again and melt in the finely chopped chocolate. Blend this until smooth. Now you can whisk in the reserved chilled cream and refrigerate this liquid for 24 hours. This cream base can be whipped like normal cream the next day.
