Green Lantern spongecake

Our Green Lantern N°308  delights your palate and mind not only cold brewed or in a matcha latte. This matcha is a great deal in your cuisine as well, imparting a radiant green glow and the delicious creaminess of pure, stone-milled Japanese green tea to your favourite recipes.

For this matcha cake you will need:
75ml vegetable oil
100ml milk 
90g flour
10g Green Lantern N°308
6 Eggs, seperated
120g sugar

Warm the vegetable oil and the milk in a pot until fairly warm, around 50°C. Transfer this liquid into your mixing bowl and sift in the flour and tea powder. Whisk until fully combined. Now it’s time for the yolks. One by one, incorporate all six egg yolks into the batter. Part one is done.

Combine the sugar and the sic egg whites in a separate bowl and start mixing them to form a glossy meringue with soft peaks. This mixture can now be folded into the batter in three instalments, consider scraping the sides of the bowl from time to time. When everything looks uniform and fully combined place the batter into a baking pan, lined with parchment on all sides.

This cake gets baked in a water bath at 150°C for around 60-70 minutes. You can check for doneness with a cake tester or a wooden toothpick. If it comes out clean, it’s done - bon appétit.
