TEA MOCKTAILS 🍹 [RECIPE]

We have teamed up with the wonderful Nicole Klauß (@nicole_klauss)  from Neue Trinkkultur and created a few special, non-alcoholic cocktails for you, which can not only be enjoyed solo, but also complement every fine dinner perfectly.
Additionally, there are basic recipes for cold brews and syrups further below.


The Chamomile Style
100 ml Cold Brew chamomile
100 ml mild naturally cloudy apple juice (e.g. Jonah Gold)
1 lime in organic quality, cut out a small wedge from it
Mineral water to taste

Put the cold brew chamomile and apple juice in a glass with ice cubes, press the lime wedge just above the glass and pour into the drink.
Add mineral water to taste, stir briefly.



Rosemary Fizz
60 ml cold brew "Imperial Dragon"
30 ml freshly squeezed lemon juice
25 ml rosemary syrup (see basic recipes)
60 ml pear juice
Mineral water
Large ice cubes
Rosemary branch

Pour the green tea, pear juice, lemon juice and rosemary syrup together with 3-4 ice cubes into the shaker or a large glass that can be closed well, shake vigorously for 10 seconds and pour into a highball glass with one ice cube. Add mineral water to taste, stir briefly. Serve with the rosemary sprig.

T & T: Tea and Tonic
100 ml of cold brew "Tip of the Morning"
1 tsp freshly squeezed lemon juice
80 ml tonic water

Lemon zest for the twist (turn both ends in different directions to bring the essential oils from the pores of the peel into the drink) and add ice cubes.

Smoke on the Water
120 ml freshly squeezed grapefruit juice (organic quality)
20 ml Lapsang Souchong syrup (see basic recipes)
1 tsp freshly squeezed lemon juice
Large ice cubes
Mineral water to taste

Put the grapefruit juice and the sesame syrup in a tumbler with a large ice cube, add the lemon juice, top up with mineral water to taste and stir briefly.

Golden Sesame
250 ml Cold Brew Tip of the Morning (see basic recipes)
1 biograpefruit, squeezed: 60 ml freshly squeezed grapefruit juice
30 ml sesame syrup (see basic recipes)
Salt
Grapefruit products

Place all ingredients except the zest and 3-4 ice cubes in a shaker or tightly-closed glass with a capacity of at least 500 ml, and shake vigorously for about 10 seconds. Serve in a highball glass and a large ice cube.
Screw in the grapefruit leftovers at the ends in a short opposite direction to bring the essential oils into the drink. Then add the zest to the drink.

For the preparation of the syrups please note the following:

Sesame syrup
80 gr white sesame
200 ml water
200 gr. raw cane sugar
2 pinches of sea salt

Roast sesame seeds in a pan without fat until golden brown
Add water, sugar and salt, bring to the boil
Leave covered overnight.
Strain and pour into a clean (sterilized) bottle.
The syrup will keep in the refrigerator for at least 2-3 weeks.

Rosemary syrup
2 twigs of rosemary in organic quality
200 ml water
200 gr. sugar

Put water and sugar in a pot and stir over medium heat until the sugar is dissolved, add rosemary sprigs and simmer for 10 minutes.
Leave to stand covered overnight, then strain and pour into a clean (sterilized) bottle. When stored in the refrigerator, the syrup will keep for at least 2-3 weeks.

Lapsang Souchong Sirup
2 spoons Mc Keang’s Lapsang
100 ml water
100 gr sugar

Pour water at 90 degrees Celsius over the tea leaves, let it steep for 15 minutes, add the sugar and stir until the sugar has dissolved. Let it cool down, strain and fill it into a sterilized bottle.


You can prepare the cold brews as follows:

Cold Brew with black tea: Tip of the Morning
400 ml filtered water
2 teaspoons Tip of the Morning

Place in a glass jar with a screw cap or preserving jar, place in the refrigerator for one night (longer infusion time will not harm), strain and store in the refrigerator.

Cold Brew Herbal Tea: Golden Chamomille
250 ml filtered water
2 tablespoons Golden Chamomile

Pour into a glass jar with a screw cap or a jar with a wake-up glass, strain for one night in the refrigerator (longer infusion time won't hurt, either) and store in the refrigerator.

Cold Brew Green Tea: Imperial Dragon
250 ml filtered water
1 tablespoon Imperial Dragon

Place in a glass jar with a screw cap or preserving jar, place in the refrigerator for one night (longer infusion time won't hurt, either), strain and store in the refrigerator.

Add ice cubes to tea and prepare cocktails from the same filtered water as the tea.
