On the foggy mountains of Omura Bay, this tamaryokucha (also known as guricha) or “curly tea” grows deep within the rich volcanic soil and partial shade of the surrounding bushes. It’s made with the Tsuyu Hikari cultivar, often translated to mean "dew light". It makes for a richly flavored infusion laden with sweetness, umami, and just a trace of citrus. This distinct flavor is the result of the careful cultivation practices developed in Kyushu island where an enthusiastic new generation of an old tea-growing family recently perfected the craft of processing these freshly picked leaves. After a careful triptych of steaming, kneading, and drying the leaves with hot air, the leaves maintain their gentle curly appearance since they are neither flattened nor pressed after kneading.
