Iced Tea vs. Cold Brew – what's the difference?

Iced tea is the umbrella term for any tea served cold, regardless of how it was prepared. Cold brew is a specific brewing method: the tea is steeped directly in cold water, without any heat, and left to extract slowly over several hours. Classic iced tea, by contrast, starts with a hot brew that is then cooled down.

The difference in the cup: cold brew releases fewer bitter compounds (tannins), resulting in a softer, cleaner flavour that often tastes naturally sweeter – even with no sugar added. Iced tea made from a hot brew is ready in a matter of minutes and has a bolder, more immediate flavour.

Our P&T iced teas work beautifully with both methods.

How to make iced tea at home

Classic method (hot brew, then chilled):

  1. Brew the tea as normal using hot water (refer to the packaging for recommended temperature and quantity)
  2. Remove the tea after steeping
  3. Leave to cool to room temperature, then chill further with ice cubes or in the fridge
  4. Serve over ice – garnish with mint, lemon or berries as you like

Cold brew (overnight):

  1. Add tea to a jug or bottle (roughly 1 tsp of loose leaf tea per 100 ml cold water)
  2. Top up with cold water
  3. Leave to steep in the fridge for at least 3–5 hours, or overnight
  4. Strain and enjoy cold

Buying iced tea – what should you look out for?

The market for iced tea products is vast. Ready-made iced teas often contain high levels of sugar, artificial flavourings or tea extracts rather than actual tea leaves. Making your own puts you fully in control of quality and ingredients.

When buying loose leaf tea or tea designed for cold brewing, it's worth checking the following:

Organic certification: Genuine organic quality is verified by independent certification bodies. All P&T teas carry EU organic certification and are monitored by the organic inspection authority DE-ÖKO-070.

Ingredients: Is the tea naturally flavoured, or are artificial aromas used? Our iced teas contain no artificial additives – only real tea leaves and natural botanicals.

Cold-brew suitability: Not every tea lends itself to cold extraction. Our P&T iced teas are specifically designed for cold brewing and develop their best flavour using this method.

Origin and quality of the tea base: Whether green, black, oolong or white tea – the quality of the leaves makes all the difference to the final flavour.

Iced tea as an after-work drink – the alcohol-free alternative

Your evening belongs to you. For those who prefer to skip the alcohol but still want something a little special, a well-made iced tea is a genuine alternative. Premium loose leaf iced tea has a complexity that can hold its own alongside a good glass of wine – without the morning-after regret.

Our organic iced teas work brilliantly as:

  • an alcohol-free aperitif on the terrace
  • a refreshing after-work drink at the end of a long day
  • a summer drink for designated drivers, pregnant women or anyone choosing to go alcohol-free
  • the base for creative mocktails (try adding sparkling water, fresh mint, ginger or fruit pur

Iced tea is the umbrella term for any tea served cold, regardless of how it was made. Cold brew is a specific preparation method: the tea is steeped in cold water without any heat and slowly extracted over several hours. Classic iced tea is made by brewing with hot water and then cooling it down. The key difference in the cup: cold brew contains fewer bitter compounds (tannins), tastes softer and often naturally sweeter – even without added sugar. Iced tea made the traditional hot-brew way is ready much faster and tends to have a bolder, more pronounced flavour.

For the best results, we recommend steeping for 6 to 10 hours in the fridge. Set it up before bed and it'll be perfect by morning. Steeping for longer than 12 hours may result in a slightly more intense or bitter flavour, depending on the variety.

In principle, yes – though not all teas are equally well-suited. Our P&T iced teas are specifically designed for cold extraction and develop their best flavour using this method. Generally speaking, green tea, white tea and oolong work particularly well as cold brew. For Japanese green tea and black tea, we'd recommend a shorter steeping time.

Homemade iced tea will keep for 2 to 3 days in the fridge in a sealed container. As it contains no preservatives, it's best consumed fairly promptly. Fortunately, with our teas, a fresh batch is always quick and easy to make.

Our P&T iced teas contain no added sugar and no sweeteners – across all five varieties in the summer collection. Any perceived sweetness comes entirely from the natural aromas of the tea leaves and botanicals.

The key difference lies in the ingredients and preparation. Ready-made supermarket iced teas often contain high levels of sugar (sometimes up to 7–10 g per 100 ml), artificial flavourings, tea extracts instead of real leaves, and preservatives. Our iced teas are loose leaf – you brew fresh, control the strength yourself, and get 100% organic quality in every glass.

For cold brew, we recommend approximately 10–12 g of loose leaf tea per litre of cold water. For the classic hot-brew method, follow the instructions on the packaging and dilute the finished brew with ice or water to your preferred strength.

Absolutely – black tea and oolong in particular lend themselves beautifully to an iced tea latte. Simply brew the tea as a stronger cold brew concentrate, then top up with cold milk or a plant-based alternative. With frothed oat milk, you'll get a wonderfully creamy iced latte – perfect for summer.
