The preparation

Give the precious tea leaves plenty of space to expand fully. Use a large tea strainer or brew the leaves in a teapot, then strain them into a serving pot. We recommend multiple infusions for your Oolong to let it reveal its complex flavors layer by layer.

The processing of the tea

Hand-plucked in spring or autumn, the young leaves and buds are first withered in the sun and then indoors. They are gently shaken on large trays to encourage partial oxidation. Under controlled conditions, the leaves oxidize to 15-30%, developing their creamy flavor. The leaves are then pan-fried to stop the oxidation. After that, the leaves are rolled into balls, dried, and sorted.

The origin of the tea

Doi Mae Salong, located in the Chiangrai province of northern Thailand at an elevation of 1,350 meters above sea level, offers perfect conditions for cultivating high-quality oolong tea, thanks to its consistent rainfall. In recent years, Thailand has emerged as a significant production country of oolong teas, using traditional techniques and local cultivars to create unique and distinctive teas.
