NOEL is bringing a new and exciting concept of fine dining to the Croatian culinary scene. Take a seat around the gongfu tea setup at the Chef’s table and be served P & T’s finest teas from acclaimed Sommelier Ivan Jug.

Tea adds story to the dish. Like our time-honoured dinner companion, wine; tea, holds the potential to open up that elusive third flavour when matched with the right flavour components. Tea sommeliers are more often than ever taking part in dinner service at restaurants that are seeking to push the boundaries of gastronomie. Pairing teas to chef dishes and opening up the plot of our dining experience for an unexpected surprise.

In Zagreb, NOEL is bringing a new and exciting concept of fine dining to the Croatian culinary scene. A six course alternative tasting menu paired with rare teas from Paper & Tea. The degustation journey begins with a cold-brew verbena to stimulate the appetite. Each consecutive tea is then brewed in gong fu style by Sommelier Ivan Jug, a visual spectacle which happens from the dining table.

 

NOEL’s tea menu lists a selection of P & T’s finest teas: Praise of Shadows, a high grade gyokuro from Kagoshima, Japan; Oriental Beauty, a smooth and luscious oolong from Taiwan; and Silver Sindano, a Kenyan white tea with a soft cocoa butter finish, to name a few. To show their guests how tea can enrich food, the menu is adapted to the seasons and a new experience is created every three months.
