How to create
the perfect cup of tea

The preparation

Prepare your cup of tea carefully with water that is not boiling hot, as the low temperatures bring out the delicate aromas beautifully. In the traditional Chinese Gongfu Cha method, tea is brewed in a Gaiwan. After a short steep, it's poured into a serving pot. This process can be repeated for several infusions.

Yellow tea production likely started as an effort to improve green tea. The processing is a guarded secret known only to a few tea masters. After the leaves are pan-fired, they're wrapped in cloths to encourage mild, controlled oxidation.
