Ingredients

12 Energy Balls
120 g raw cashews
150 g pitted Medjool dates
4 g Culinary Matcha
10 g melted coconut oil
2 g Vanilla extract
1 pinch Salt
2 tbsp matcha powder
2 tbsp shredded coconut

Preparation

Grind the cashews: Add the cashews to the blender and grind on high for about 20 seconds until coarsely ground.

  • 4 g Culinary Matcha
  • 10 g melted coconut oil
  • 2 g Vanilla extract
  • 1 pinch Salt

Add the dates: Add the dates, matcha, coconut oil, vanilla extract, and salt. If your dates are firm rather than soft and sticky, soak them in warm water for 10 minutes and drain well before continuing.

Blend into a dough: Blend for 1–2 minutes until you get a sticky, moldable mixture. Too dry? Add an extra teaspoon of water or coconut oil. Too wet? Mix in another tablespoon of cashews.

Shape into balls: Using a tablespoon, portion out even amounts (about 20 g each) and roll between your palms into balls.
